It’s a Savor tradition – Each year on the Sunday prior to Savor week, our chef Logan McGear smokes an entire hog!
We’ve secured a 120 pound beauty this year along with a standout draft list from Victory, Ommegang, and Boulevard.
Beers will be tapped and ready when we open the doors at 11. Plates of smoked pork should be ready to serve around 5:30 that evening.
Highlights of the draft list include:
Victory Java Cask – 14.3% Barrel-Aged Coffee Stout
Victory CBC Keller Pils – 5.6% Unfiltered Pilsner Dry-Hopped with Hallertau Blanc
Boulevard Saison Brett – 8.5% Dry-Hopped Imperial Saison with Brettanomyces
Boulevard Rye-on-Rye – 12% Rye Strong Ale aged in Templeton Rye Barrels
Ommegang Double Barrel Dubbel – Ommegang Abbey aged in bourbon and brandy barrels

Wednesday, May 30 – Country Boy “Living Proof” Showcase –
Doors at 5 p.m.
A huge benefit of having Savor in DC is the relationships you build with breweries across the country. This marks the fifth time we’ve featured our friends from Country Boy at one of our restaurants!
Over the years, they’ve continued to grow and expand a program called “Living Proof” that focuses on barrel-aged wild beers and mixed-fermentation.
We’ve secured five of these amazing tart and funky offerings to showcase for you along with a slew of their year-round favorites!
Wild and sour highlights include:
Living Proof: Balaton Cherry – A barrel-aged sour red ale re-fermented on massive amounts of Balaton cherries
Living Proof: Plum Wild – A collaboration with Black Narrows brewed with Virginia wheat and rye before a lengthy oak aging with wild yeast and bacteria. The funky concoction is then re-fermented on plums and blackberries
Living Proof: Golden Wild – The mother of their Living Proof program. A golden ale fermented in foeders with wild yeast and bacteria and aged for a year in oak
On the clean side:
Chocolate Milk Stout – 10% Imperial Stout brewed with lactose sugar and cocoa nibs
Infinite Sadness – 10% Imperial Black IPA aged in bourbon barrels and dry-hopped three separate times
